EMERGENCY COPIER PAPER

i didn't realize until after going shopping yesterday that there was NO COPY PAPER!

pop brought home some oklahoma okra and i want to pickle it - so went on line to get the recipe, copy it and put it with the rest of the recipes that are so disorganized on a magnet clip on the fridge - what COULD i do?

zgirl said, "mom, put a piece of binder paper in there - it works."

IT WORKS LIKE A CHAMP!

not only that, now we can put all our recipes on binder paper and actually organize them in a binder - yeah, yeah, yeah - i know we could just punch holes in the regular copy paper and do that, but this is so much easier and you can make notes better as it is lined.

here's the recipe for those who home can:

3# fresh whole okra pods (3 - 4 inches each)
3C water
1C white vinegar
1/4C pickling salt
2T minced garlic

i always sterilize my jars, caps and rings in the hot rinse cycle in the dishwasher, but if you don't have one, clean and rinse them in the sink - fill each one with hot tapwater - then pour boiling water over them, drain and turn upside down onto a dishtowel for the next step. put your caps and rings into a pan of very hot water.

wash and drain okra well. pack tightly into hot, clean pint jars, leaving 1/2 inch head space.

in a sauce pan, combine all other ingredients and bring to a boil - ladle over okra. wipe rims with a clean, damp dishtowel. place a cap on each, the ring on to just barely tight - process in boiling water bath for five minutes - this timing begins after water begins to boil again. remove from water and await the popping sound the cap makes when it's sealed - once sealed, tighten ring. yield four pints.
