The grocery store I patronize has some wonderful meat salads, that we enjoy. One of them is Caribbean Chicken Salad, a very tasty blend of chicken breast, roasted red peppers, chutney, onion and mayonnaise.Unfortunately, in these times of rising prices, it is rapidly shooting past our ability to obtain, even as a treat.Sooooo, rather than suffer withdrawal, I have endeavored to recreate this tasty treat from ingredients on hand. Unfortunately, I did not have any roasted red peppers...oh well, it did pass my son's taste test.
In medium bowl place,
2 cans of drained white chicken (or use left over roasted chicken) flaked apart
1/3 - 1/2 cup mayonnaise
1 tsp. lime juice
1 tbsp. dried cilantro, or fresh...to taste
1/3 cup finely chopped onion
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/3 - 1/2 tsp. cayenne pepper
1 9 oz. jar of chutney(Major Grey's is my choice)
Mix together and adjust seasonings.
Excellent as a sandwich, on crackers, or stuffed into a fresh tomato.
