Overnight Coffe Cake (a crosspost)

3/4 c. butter or margarine, softened

1 c. sugar

Cream together, then add;
2 eggs

1 c. sour cream.


In a separate mixing bowl, combine;

2 cups all purpose flour

1 tsp. baking powder

1 tsp. baking soda

1/2 tsp. salt

1 tsp. nutmeg.



Add dry ingredients to the butter mixture, a little at a time, mix well, pour into greased and floured 13x9x2, or 2 8x8 baking dishes.



Combine

3/4 c. packed brown sugar(I use dark)

1/2 c. chopped nuts(walnuts, cashews, or pecans...or be like AOW and use mixed)

1 tsp. gr. cinnamon or pumpkin pie spice,

mix well and sprinkle over top.(I add pats of butter as well.)

Cover and refrigerate overnight, next morning, uncover and bake in 350 degree oven for 35-40 minutes, or until it tests done.Mmmmmmmmmm!

this is no lie - the VERY best recipe i've found for banana bread is on the back of a "jiffy" biscuit box - you know the kind you can get three for a dollar? there are only like three ingredients you have to add, and i might add, have never gotten better compliments on a banana bread like this one. we also put cream cheese frosting on it...you know...because it just wasn't fattening enough...
